Hamburger on Ciabatta Bread.

This hamburger was made by my teenage sons. The fresh lettuce, tomato and avocado accompanies the burger stuffed with mushrooms and jalapeno on ciabatta bread-- makes a hearty sandwich that is filling and delightful.

Cornish Hens in Tamarind Glaze


Cornish hens are small and are excellent for a get together. Because of their size they are more manageable and your guests will appreciate the size and the amazing flavors. They are also excellent witn rosemary rub.

Family Food Fanfare is the motivation of my appreciative children, those I gave birth to and those that have joined the family. It is wonderful to hear the words, God bless the hands that prepare this food. So every day I am planning and researching and cooking for a well deserved family.
My love for cooking began as I watched my mother (not just cook but create irrestible dishes from day to day) and when I studied Home Economics in High School. However, I became more enthusiastic when as a single parent my pocket book could not accommodate the restaurant life. So instead of telling my children we could not go out and eat, I decided to bring the restaurant home and appoint myself master chef. Now we have a family of self made chefs.
I find cooking enjoyable , fascinating and a work of art.
Someday I hope to start a restaurant that is extended to the public and I hope they will enjoy my food as much as my family does.

Chocolate Cake







My children call this the love cake. They like this alot. One pic is showing the top of the cake.

Chipotle Chicken in Black Bean sauce


The name was getting too long so I left off the tomato part. However the tomatoes are also roasted in the oven with a sprinkle of olive oil or vegetable oil. This chicken has just enough spice to make you desire another serving

A dear friend requested the recipe for this dish. This is how I made it. Most of the dishes on the blog I made up myself. I can give you an idea of how I made the dish, or I will have to make it again to be more precise. Wash chicken in lemon water,
Season with garlic, onion powder, ground up chipotle cubes, salt and freshly ground black pepper. Brown in skillet in a little olive oil, place chicken on a baking pan in preheated oven at 350 degrees, Blend left over black beans add to the drippings in the skillet, not more than a few tablespoon of oil necessary. Make sort of a rue, add little more chipotle seasoning. Base chicken with rue till its cooked. Serve excess rue as a gravy. Tomatoes were cut drizzled with vegetable oil, salt pepper and placed in the oven before hand.( Dehydrate the tomatoes when on sale to use in different dishes.) To dehydrate using cheap method lol, put in oven at 170 to 200 or less depending on the oven.

Deviled Eggs With Hummus

I do not follow a recipe for most dishes, except when baking, therefore, I have the option of exploring new ideas. So this time I decided to add a little hummus. It tasted great and it also makes the filling a little thicker consistency so the dish looks more appetizing for a longer time.

of sweet potato and avocado seem unusual but it is
actually quit palatable.

Curried Goat is a delicacy in Jamaica. It is usually served with white rice. I made polenta this time and it was quite enjoyable.

Have you ever roasted your chicken on the stove top? You can get amazing and fast result. I will call my dish Broasted stove top Chicken because it is like roasting and baking at the same time. I served my dish with potatoes that I sauteed in a pan with seasonings and fried shallots and then cook in the oven. The vegetables are a mixture of different vegetables such as Japanese napa cabbage and squashes. The higlight of the medley of vegetables is the dried cranberry tossed in a hot pan with a small amount of olive oil.
A Granita is an Italian ice dessert. Try this guilt free dessert. This Granita made from frozen unsweetened apple sauce is topped with a mixture of plain yogurt and raspberries. A few raspberry add the finishing touch to this dessert.


Stuffed Chicken Breast With Couscous

This dish of chicken breast and couscous will tantalize your taste buds. The chicken breast is stuffed with sauteed apples and chipotle, then braised in olive oil and plain yogurt. The couscous is flavored with the richness of sauteed eggplants, fresh sweet basil and red bell peppers.


Garlic Braised Tilapia

The garlic brased Tilapia is served with whole wheat angel hair pasta which has been prepared like you would Risotto using fresh roma tomato pureed in the blender. The vegetable is baby bok choy braised in soy sauce with a hint of lemon.
