Chicken Cacciatori






This is just irresistible.
Everyone has their own version and I am no exception. So here is what I did. Take your chicken pieces, bone in., wash in lemon or lime water. Remove skin if you would like. Dry the pieces off and season well with garlic and onion powder, salt and freshly ground black pepper and pimento grounded. To have a more accurate recipe. I will tell you how much I cooked etc. I don't measure when I cook so I will do my best or you can get a recipe off line and then eventually make it your way.
Cut up two whole chickens
about 2 tbsp onion powder (not salt)
2 tbsp spoon garlic
1o pimento grains crushed
10 pepper corn crushed
Salt to taste.
In a large skillet, heat oil
Brown chicken, turning occasionally to get all sides. Remove the finish batch to a bowl and continue browning the rest. While chicken is browning, cut up 2 potatoes in thin slices, cut two jalapeno into rounds. Remove all pieces of chicken to the bowl. Pour off excess oil leaving about 1/3 cup of oil. Add two regular cans of diced tomatoes, or one can dice tomato and one can tomato paste. While that is sauteing add jalapeno and potato slices. Stir well. Add 2 cups of water. Pour sauce in a smaller pan. put chicken back into the large skillet, bigger pieces at the bottom. Pour the sauce over the chicken . Bring to a boil. Then simmer till cooked. Add some chopped bell peppers at the end and cook for 2 mins, no longer so your bell peppers will not over cook. Serve with rice or candied yams.

Trifle


I need a trifle dish, well I must say dish or no dish it was delicious!!!!!!!
Recipe:
1 (14 ounce) can sweetened condensed milk
2 cups whipping cream whipped (or regular whip cream)
I (16 ounce) prepared loaf pound cake, cut in cubes.
1 (4 servings) instant vanilla pudding
1 1/2 cup cold water
1 (21 ounce)can peach pie filling
2 cups raspberries.
Instruction:
In large bowl combine sweet milk,water and pudding mix, mix well, chill till thickened (20 mins)
Fold in whip cream. In 8" trifle bowl layer 1/2 pound cake pieces i/e pie filling, 1/3 raspberries, repeat layers, garnish with remaining raspberries. Chill about 2 hours.

Peach Cobbler









Home made peach cobbler, very delicious and easy to prepare. The flavor was excellent.

Corn beef and cabbage.



















This dish is very tasty because of all the medley of flavors. Corn beef not too salty, the carrots slightly sweet and starchy potatoes and the cabbage flavor comes together perfectly. to add a little more some fresh bell peppers, crisp and flavorful and fresh, The combination made the meal very satisfying.

Peanut butter parfait


Cup of dessert anyone?
I made this delicious dessert from Paula Deen's recipe. I served it from a cup because it looks more like a cup of hot chocolate that would accommodate this cold weather. Although it is not a warm dish, it can compliment a meal any season of the year. The chocolate pudding, bananas, crumbled peanut butter cookies, cool whip, all amazing. But the best part is the peanut butter mixture that is so light and fluffy like a mousse. Exceptional. The peanut butter was just right and not over powering. Paula also added peanuts, i didn't have any at home so I didn't add it.
Recipe:
2 cups
1(3.9 ounce) box instant chocolate flavored pudding mix
1 cup creamy peanut butter
1/4 cup confectioners sugar
1 (3 ounce) package cream cheese, softened
1 cup whipped cream topping
4 bananas, peeled and sliced
1 cup chopped peanuts, plus additional for garnish
1/2 ( 1 pound package) peanut butter cookies crumbled , and additional for garnishing
Direction:
In a medium bowl, combine milk and pudding mix; beat at medium speed with an electric mixer for 2 mins, set aside. In another bowl combine the peanut butter and confectioners sugar beat till creamy then add cream cheese mix till creamy, then FOLD in the the whip cream topping and mix to combine In a serving glass, LAYER the pudding, bananas, peanuts, peanut butter mixture and crumbled cookies as desired. Garnish with cookies and chopped peanuts. Serve immediately or store in fridge until ready to serve.

The Jamaican spice bun is known throughout the island as one of the favorite sweet breads. It it has a heavy bread like texture. This delicious masterpiece is traditionally served with slices of block cheddar cheese. Very delicious!!!!!!!

Recipe:
3 cups all purpose flour
1 cup milk
1 tbsp. butter
4 tsp. baking powder
1tsp. cinnamon
2 cups brown sugar
1 egg
1 cup raisin
1 tsp. lime juice
1 pinch salt.
Method:
Cream sugar, butter, egg and add milk in mixing bowl. Mix all dry ingredients together except the raisins. add flower a little at a time, mix well then add lime juice. Fold in the raisin or cranberry.

Here is a list of some of the dishes I have made. Some may not have a pic on the blog as yet.

Oxtail stew and coconut rice, native to the island, meat has butter beans, green onion and fresh thyme habenero pepper, may use a different pepper

Dilled fish with onion and tomatoes, - Season fish of choice, (I use whiting or tilapia) and slightly flour and pan fry. Pace fish on serving platter. Saute onion slices chopped tomatoes in the pan you just removed the fish from. Add few chipolte cubes optional season with salt and pepper. Do not over cook. Finishing touch add lots of fresh dill. and pour over the fish.

Salmon in infused sweet basil oil, Skin or not skinned salmon-Pour shallow oil in a pan, just lay branches of sweet basil in the hot oil and sprinkle with salt and pepper, turn on medium heat till the basil look like it is getting dried in the oil, season the salmon sparingly with salt and pepper, lay the salmon on top of the basil branches. will be cooked in no time so scoop the little oil in the bottom of the pan on top of the salmon. May put some of the basil leaves on top and bottom of the serving platter. Sweet basil fries nicely, just looks dehydrated and good.
Curried Salmon, curry is native to different countries and each country has their own kind. The one we use in Jamaica is more yellow. So here is what I do. Season the salmon, saute in pan, then mix some curry in a can of cream of mushroom soup and pour over the salmon, let it simmer, at the end add some green onion. aka scallion, spring of thyme pepper of choice, (fresh of course). serve with rice or mashed potatoes or your choice.
Tilapia brown fish stew, So easy, follow the recipe for the dill fish but instead of plating it, return it to the skillet and add some broth of choice, chicken, or vegetable, do not cover the fish with the broth. Cover the pot so the fish steams. season with salt pepper and thyme and green onion. hint: bruise the green onion by smashing it so the flavors will come out in the stew and it also helps to make it creamier, then remove the thyme and green onion before serving You should have at least a cup or two of stew to pour over the fish.
